You built a website for a client, now they want email addresses and a bunch more stuff.
It’s downright silly to not take care of this for your client as well. Google apps is a great resource for Joomla developers and website builders. Make sure you take advantage of this free and brilliant resource.
Why would I have Google do email, when my webhost does it already?
You chose Joomla because it does what you need and does it very well. Google apps is similar in this respect. The webmail scripts included in cpanel and other popular webhosting control panels are nice, but everybody is familiar with GMail on some level. Thats because it does email very, very well. From the front-end via the web-interface, to the back-end via POP and IMAP. The spam filters are some of the best in existence. Worried about speeds? Google has hundreds of mini datacenters scattered all over the country in order to give you the best possible experience possible. Your webhost is run out of one data center most likely.
What happens when your webhost inevitably goes down? It may be for a few minutes to a few days, but it happens sometimes. If you are using Google apps for your email needs, business will not come to a screeching halt, there will still be communication via email.
If you are still doing email with your webhost it might be time to reconsider and eliminate some of your day to day headaches. Dump those stresses off onto Google, and relax a bit. I have, and I have not regretted it one single day.

You forgot to mention that Google Apps costs 50 dollars a year per user.
Let’s assume you are doing a website for a small company that has dreamed up 10 email addresses. Thus an additional $500.00 dollars every year for the rest of their life for a service that is already included in their web hosting plan?
Good luck, I agree Google Apps is great, but I haven’t sold the concept to anyone yet…have you?

I didn’t forget to mention it, because it is only true if you purchase the business edition. The standard edition is free.

There is no need to “sell the concept”. This is how I personally run email for businesses I setup. It’s not a option. It’s a great value added service for companies, and it takes the strain of email off my hardware.
Set it up for a side project. Then you will see the light.
